Vegetable Marinara

Ingredients

BASIC MARINARA See Instructions Below*
1/2 lb Fresh Mushrooms sliced & sautéed OR 1-2 small cans of sliced mushrooms drained
1 yellow squash chopped into small cubes
1 zuchchini chopped into small cubes
1 Onion small finely chopped
1-2 carrots large finely chopped
1T Butter
Garnish Fresh Basil
To Taste Grated Parmesan Cheese

Directions

  • (Basic Marinara)
    1-28 oz can crushed tomatoes
    2-1/2 cups water
    1 Easy Peasy Seasoning Packet
    Prepare per Easy Peasy box instructions.

 

Melt butter in skillet over medium heat.  Add all veggies and cook for 3-5 minutes until slightly soft and transparent.  Stir often.  Add to marinara and simmer for 10 -15 minutes or more.

Serve with your favorite pasta.* Garnish with fresh basil florets or strips and Parmesan Cheese.

*1 lb Pasta Preparations:
Bring to a boil 4 quarts of water, add 1 tsp. canola or vegetable oil and 1 TBS salt
Prepare dry pasta of choice to al dente stage, approximately 6-8 minutes.
(refer to package instructions for the amount of time is required for this stage)
Drain well and place in a warm serving bowl.
